Recipes: All Weight Watcher Friendly

Since Lori asked, I figured I'd share these recipes.
Creole Poached Chicken
2 tsp olive oil
2 onions, finely choppped
1 green bell pepper, seeded and chopped
1 celery stalk, finely chopped
1/2 carrot, chopped
1 14.5 oz can crushed tomatoes
1/2 c. low sodium chicken broth
2 tbl. chopped fresh parsley
1. tsp. ground thyme
1/4 tsp. salt
1/8 tsp. cayenne
4 4oz boneless chicken breasts
Use olive oil to sautee onions, bell pepper, celery and carrot. Add broth and tomatoes, parsley and spices. Stir well. Add chicken breasts, cover and poach for about 10 minutes. Remove chicken, leave uncovered and cook for about 5 minutes until sauce is reduced.
1 chicken breast and half a cup of sauce is 3 pts.
1 1/2 tablespoons chili powder
1 tablespoon brown sugar
2 teaspoons ground cumin
1 teaspoon garlic powder
2 tablespoons Worcestershire sauce
4 (5 ounce - 1/2-inch thick) lean, boneless pork chops
1 pound green snap beans, steamed
1/2 teaspoon fresh lemon juice
Heat broiler and coat broiler pan with cooking spray.
In a small bowl, combine chili powder, sugar, cumin and garlic powder. Add Worcestershire sauce and stir until paste forms. Rub paste onto both sides of each pork chop, place on prepared pan and broil 4 minutes on each side until inside is no longer pink.
(We grilled them. Tasty goodness!)
WW Points = 4
1 lb. uncooked green beans, washed and with the ends snapped off
1 tbl. sesame oil
2. tbl. low sodium soy sauce
~2 tbl. sesame seeds, toasted
Mix beans, soy sauce, and oil. Refrigerate. Add sesame seeds and serve.
WW points = 1
1 can sweet corn
1 frozen bag of edamame beans (no pods)
2 tbl. chopped cilantro
1/2 cup lite sour cream
Heat edamame until no longer frozen. Combine ingredients. Refrigerate. (I also usually add a bit of salt to the edamame as it's cooking.
WW points = 2 points

Date: 2010-04-02 05:19 pm (UTC)I'll probably use frozen corn, since I tend to like that better than canned, and I'll substitute parsley for cilantro - I'm one of those people who have the gene that makes cilantro taste like soap - but at least you've given me a great idea!
